Lentil Hummus Recipe

I am a HUGE fan of hummus and I eat it every day – sometimes several times a day.  I like to use an organic flat bread/pita but most of the time I opt for Mary’s Gone Crackers (original) to scoop up my hummus.  I like having variety and I thought since the hummus I already have was made from chic peas (garbanzo beans), I might want to try something different so I decided to make my own using lentils.  I saw we had a can of Amy’s Organic Lentil Soup amys-lentil-souphanging around in the cupboard so I decided to use it and see how it would taste.  This recipe is really easy, fast to make and tastes delicious.  I drained some of the broth from the Amy’s Organic Lentil Soup and then put it in a single serve blender cup that we have (you can you a food processor or regular blender too).  I then added 2 1/2 tbsp of organic tahini, the juice from one fresh lemon, a nice amount of chopped garlic, 2 tbsp of organic extra virgin olive oil, a pinch of cumin, salt and some pepper. I put the blender on pulse and whipped it up for about 45-60 seconds (until everything was incorporated).  After that I transferred it to a bowl with a lid and put in the refrigerator for a couple hours.

Vitamin D: Critical for Good Health

Vitamin D is critical to good overall health…..allow me to explain.

Vitamin D is converted into a hormone by the body and serves many critical roles. It helps maintain bone health, has an important role in reducing inflammation and has a major impact on the immune system. If you have a Vitamin D deficiency, you increases risk of bone loss, inflammatory disorders, autoimmune diseases as well as cancer. In fact, d3Vitamin D3 has been shown to ward off the flu virus.

Normally, sunlight is converted to Vitamin D on the skin but areas in the northern area of the country have serious deficiencies, especially during the colder months. At your next blood test, have your doctor test your Vitamin D by measuring 25- hydroxy. The range given is 30-100 but you want to be in the optimal range which is 50-60. If you are levels are deficient, take an extra 1000 IU’s of Vitamin D3 for every 10 points that you need to increase and then re-test in 16 weeks. Liquid D3 (1 drop equals 1000 IU’s) is preferable since it is better absorbed but capsules will work as well.

I Have Some Exciting News To Tell…

Victoria Albano has been a client of mine for 7 years. She was and still remains one of the top trainees in my facility with regards to her level of commitment (she drives 70 minutes each way for her workouts), effort, focus, love of training, learning and life.  She expands beyond the walls of the gym and doesn’t wait for life to come to her, she goes out and grabs it – and does it with gusto. Vicki and I speak often and share ideas, bounce things off each other and provide honest feedback so img_4734we can help each other improve on all aspects of life.  I never laugh so hard as when I’m in her company as her sense of humor and infectious smile brighten my day.

Vicki took the summer to be adventurous, doing what she loves by exploring life, meeting new people and letting things happen the way they’re supposed to. In August Vicki  and I were talking about her next step and I posed the idea of sharing her knowledge and passion with others in a formal environment and asked her if she would join me and become a trainer at FIT by FRED.  Since establishing my personal training practice 13 years ago, I have been a solo operation.  I never seriously considered having someone else in my facility  before, but knew that Vicki would be a tremendous plus for my business in all aspects.  After careful consideration, Vicki has decided to join FIT by FRED and I couldn’t be more excited.  Vicki has many skills in addition to her personal training ability with the inclusion of a strong Life Coaching background, Reiki, Guided Meditation and dealing with a rare disease.  I know that her clients will get to experience much of what Vicki has to offer and will certainly be changed for the better because of it.
