I am a HUGE fan of hummus and I eat it every day – sometimes several times a day. I like to use an organic flat bread/pita but most of the time I opt for Mary’s Gone Crackers (original) to scoop up my hummus. I like having variety and I thought since the hummus I already have was made from chic peas (garbanzo beans), I might want to try something different so I decided to make my own using lentils. I saw we had a can of Amy’s Organic Lentil Soup hanging around in the cupboard so I decided to use it and see how it would taste. This recipe is really easy, fast to make and tastes delicious. I drained some of the broth from the Amy’s Organic Lentil Soup and then put it in a single serve blender cup that we have (you can you a food processor or regular blender too). I then added 2 1/2 tbsp of organic tahini, the juice from one fresh lemon, a nice amount of chopped garlic, 2 tbsp of organic extra virgin olive oil, a pinch of cumin, salt and some pepper. I put the blender on pulse and whipped it up for about 45-60 seconds (until everything was incorporated). After that I transferred it to a bowl with a lid and put in the refrigerator for a couple hours.
